Crust: 1 c. flour 1/4 tsp.salt 1 c. quick oatmeal 1/4 c. sugar 6 T. melted butter
Filling: 4 c. diced rhubarb 1 c. sugar 1/4 tsp. cinnamon 2 T. flour 1 beaten egg
Crust:
Mix dry ingredients. Add melted butter and blend with pastry blender or
fork until crumbly. Press half of mixture on bottom and sides of 9 inch
pie pan. Filling: Mix dry ingredients; add beaten egg, then rhubarb.
Pour into crust and top with remaining crumbs. (This is a tart recipe,
add additional 1 1/4 cups sugar, if desired.) Bake 45 minutes at 350°.
